I first learned about the vegan movement and the incredible benefits of a whole food plant based diet around 2016, whilst performing research for my PhD in organic chemistry. At first I was very resistant to the idea that a vegan diet could be a good choice, but over time, I came to see just how powerful a vegan lifestyle was, and I felt compelled to embrace veganism from an ethical standpoint. The health and athletic side effects have been incredible, leading to my losing 50lbs and feeling better than ever.

I now use my scientific training in chemistry and food science, as well as my experience cooking incredible whole food vegan meals to advocate for the adoption of a healthy, mind-blowingly tasty vegan lifestyle.

My vegan story started in 2007 when I watched a screening of Earthlings. During the Q&A someone from the Vancouver Humane Society said that the best thing we can do to help the animals we'd just seen onscreen was to take meat out of our diets. I didn't do it 'cold turkey' but over the course of a few years I slowly focused on seafood and plant-based foods. I was able to let go of seafood in 2017 and when I found out I was sensitive to dairy (after taking a sensitivity test to get at the root of my digestive pains) in 2018, that was it.

I started exploring vegan food in 2016 or so, to see if I would feel better on a plant-based diet. I have found myself when I was eating like that (vegan) than ever before, and over time I swapped out pretty much my entire standard diet for a whole foods-based, vegan one. (I’ve known for years that I am severely lactose intolerant, so I was already somewhat of an expert at avoiding dairy.) Now that I’m healthy and feel amazing, I find myself wanting other people to try out a partially or completely. Because plant- based diet is for all planet and all lives creatures.

My Vegan Story :
Long story not cut short (showing the multiple steps):

When I was under 6 years old, my parents would catch fish from the ocean. I would swim in the ocean, but didn't like the smell or taste of the ocean water. So when I saw the fish, I had a hunch, and when I tasted it, it tasted like the same bad ocean taste, just with heavy metals (which I later found out is Mercury, but I would think it's others too. Tasted like lead, bromine, tin, among others). I only had 10 meals in my life that had seafood, and almost half were just taking one bite and disliking it, having it accidentally in my food, or pushed on me (I lived in a seafood community. My parents would share the fish with the entire neighborhood). Later on in life, seafood would make me ill (I just ate a lobster bisque to see if I could many years later, but then couldn't and didn't even taste good, as it was making me too swollen to eat it).

When I was 10, I decided to learn about health and took out maybe 10 books and read 6 from front to cover and glazed the rest. One was a dummies book. I liked to learn about subjects from A -> Z. At the time there was a vegetarian in my family, but since they ate chicken and fish, I didn't think of it (turns out there was another vegetarian who made me pancakes for my birthday dinner - I didn't know they were when I was 5/6 years old).

When I was 12, my friend said she was vegan. I gave her the typical spiel: 'where do you get your protein', 'why did you go vegan', and I said it wasn't for me and got disgusted. Later, I said she had an impact on my life when I was 12, I decided to do the opposite of McDonald's double quarter pounders with cheese, fries, and soda each week: go healthy. That was a turning point. I decided to change my taste buds to like yogurt instead of ice cream (I thought it was healthy until later I found out that it had 42 grams of sugar and the first ingredient was high fructose corn syrup followed by sugar). It took me 6 months. Around 3-4 months, I decided to go back to eating Big Macs, but they tasted terrible. I never went back.

This is when I feel I became a health influencer - for the entire world. Then I believe I started the health craze of 2003 - I went healthy and asked my city to as well (I said to put in a healthy vending machine in for kids, which they did years later, because they started a health program). Back then, there was verbnow, pass the plate (maybe that came later), and other programs along with all the diet books that I just read a lot about. Then I found out what I was eating wasn't healthy: the food said no trans fat - but it had it (under 0.5g).

So it took me 3-4 years to find the truly healthy food around 16 I ran into health problems, but the internet was just building and there were no answers to what is backed by a lot of knowledge today. So it made me really look into the question I always wanted to hear, but got no straightforward answer to: where did the beef come from? It was at the Isla Vista Co-op where I would read what I normally didn't see and hear what I normally didn't hear and there I found out about where food came from and didn't like it and went vegan then. I failed 5 times until I found out that I was missing Vitamin K2 (which is different than K1 and hindered my absorption of vitamins, especially zinc).

In that time though, when I was in college, there was a meat-free Monday and I thought I wouldn't make it, because my family always said: 3 sources of protein per meal. However, it tasted better. Also, at that time, I would eat steaks to donate blood until they said the iron's too low. Turns out beef doesn't have much iron, as the food with the most iron is thyme. Now my iron is in the normal range.

Still my health wasn't doing well (like muscle aches), so I became a vegetarian in 2011 instead and got better. My body changed to have a higher metabolism but more food sensitivities, as I changed my diet and what I ate as a kid (like soy), I couldn't eat anymore. I also did it for convenience, so that I wouldn't have to create a calendar to know what to eat when (like some fish every 2 months, beef every few days, etc.).

It took me 7-8 months to transition until my sister said, just do it already if you say you are. Years later, I told my sister I was a vegetarian, and she said: you're so cool. Someone I knew said: how do I go vegetarian. I became popular from it. Then she went vegan.

My health after 7 years of that declined more (I couldn't eat milk anymore, and eggs hurt my muscles), I went to a raw vegan meetup, and they were like: do it. So as I started to go vegan, my sister went less and less that way. Now I'm transitioning to being more raw (or at least uncooked), as that's what I prefer. My grandparents used to grow their own food and that helped me shape my viewpoints towards vegan food. I actually prefer the taste of plants, because I liked fruit as a kid. I feel better, but since I was rushed, instead of eased into the transitions, it's still hard to be vegan.

Along the way, I got a health science degree and it helped out many people become healthier and I notice when they stop being vegan, they get aches, pains, and severe health issues that they blame on age, when it's never on age.

I became Whole Food, Plant Based at 52 when I was told that I needed to start meds to lower cholesterol. I switched to a full WFPB diet in about 2 months and lowered my cholesterol from 198 to 148. I then found many other reasons to continue on a WFPB diet. My wife (51) and my daughter 19 also are now eating a Whole Food Plant Based diet.

I was vegetarian for many years before I became vegan. I became vegan because logically it didn't make any sense to be plant based and still eat dairy and eggs. In 2019, I was doing great on the WFPB diet, losing weight and feeling great. Then the pandemic hit, I was furloughed from my job, and I started eating too many sweets and gained weight. Now that I have a new job and things are getting better, I am back to good eating and losing the weight. I am very grateful to Dr. Campbell and the other professionals that have done so much research. I feel completely comfortable with my lifestyle, given all of the evidence-based information.

5 years ago after being 25 years living the Vegetarian life, my wife and I made one if the most important decision in our life and became full fledged Vegans.

My personal drive for actively promoting Veganism on social media and real life is my concern about the devastating impact of the animal protein diet and use of animal derived products on Health, Environment and Animal Welfare. Therefore I am very interested in the innovative plant-based products/services that are developed and introduced on the market every single day by inspiring Vegan entrepreneurs.

Clean-meat development I consider also interesting looking at the positive impact on environment and animal welfare (not necessary on health).

During my activities as Volunteer for The Dutch Vegan Society, I got connected to some enthusiastic Dutch Vegan entrepreneurs. Together we organized several successful meet-ups (with upto 100 attendees) for Vegan entrepreneurs and investors in The Netherlands.

My Vegan Story :
I had been vegetarian for a few years before I became vegan. I became vegetarian with the intention of becoming vegan because I have a moral objection to the exploiting and killing of animals. Interestingly when I first became vegetarian I was almost entirely vegan, due to lack of financial means I pretty much sustained myself on only the cheapest vegetables from the green grocer blitzed and turned into soup.
As became vegan I really enjoyed the possibility for innovation and creativity in vegan cooking (not just random assortments of veg turned into soup). I started creating recipes, particularly ones which created alternatives to non vegan products so as to entice my non vegan friends to try vegan food.
After becoming vegan I noticed some very significant health benefits. I know there is some scientific debate around these and not everyone agrees but this it what I experienced. I was over weight and not really that far from being obese and I struggled to run a mile. I became vegan and noticed I had loads of energy. I got more active and joined a gym, within 3 months I lost around 40lbs! I joined a boxing class and despite a life of inactivity and indulgence my cardio, in just 3 months had reached a point where it was almost unequalled by anyone else in my class. This absolutely shocked me and whilst other factors were at play I feel being vegan is one major one.

I have now, recently started a vegan blog where I hope to share vegan recipes and articles in an easy and accessible way. I notice many recipes have a lot of excess content that can be struggle for people like me who struggle with attention and reading, so I have really tried to streamline mine.

I just discovered your request that I contact you and therefore I am responding.
Although I am definitely influencing folks to become vegan, I have not always been 100%. I believe that “the perfect can be the enemy of the good.” I have no other vegans in my life and am extroverted, so being vegan remains a real challenge. I am also passionate about exercise (I started a running group decades ago in midMichigan and have run marathons), climate change, learning to love unconditionally and non duality. I follow Dr. McDougall and normally am not connected with the medical establishment. I believe that the medical industry is completely controlled by the drug companies and food industry. I take no prescription drugs or supplements. I am currently power walking six miles a day and have never had a real issue with weight. I have never suffered from chronic pain or had a serious illness. I am very grateful!

“Let’s start doing Meatless Mondays” my wife told me as I had a beer in my hand…”Ughhh, fine… I’ll give it a try.”

After a few weeks, I noticed I felt better after Meatless Mondays over any other day of the week (sadly indulging in Omnivore Meals)

So… I decided to give up Dairy for a few days… which turned into a week… which turned into a month… which turned into: “Damn, I don’t feel bloated anymore…”

That led to: “well let’s try more meat free days”… leading to… a few weeks… leading to “Damn I haven’t had meat or dairy in a month…” and my plant based journey began.

Now I say plant based, because that is a diet, or choice on how to eat.

It took me about 2 years to finally figure that out and understand what “being vegan” means…

Being Vegan is all about the animals. It’s about how you SEE them As beings and NOT animals, treat them ALL equal, and think about them as LIFE instead of PROFITS!

The idea of going vegan is something I had thought about for some time, but did not commit to 100% until Sept 2018.

During the summer of 2018, I experienced increasingly painful inflammation in my right hand as well as other joints.

My right leg grew increasingly painful on even a short run of a couple miles.

As a writer, it was impacting my ability to type for more than a few minutes at a time never mind, my overall joy of movement.

Other things I grew accustomed to were afternoon energy dips. My focus was not as good as it had been in the past. I didn’t feel as creative as I desired to be and my passion for life was waning.

Not wanting to depend on medication to get rid of the pain, I hopped on the Internet to research natural remedies to minimize the inflammation.

I found YouTube videos, books, blog posts and articles all touting the miracle results people were experience with a whole food, plant-based eating protocol. Although some of it seemed too good to be true, I was desperate to feel better.

Figuring I had nothing to lose, I decided test out a 100% plant-based eating protocol for seven days.

According to many “real” people who were plant based, seven days would be more than enough time to notice a slight improvement. Actually, some people were making claims that plant-based eating was more like a miracle cure than anything they had done.

When I say “real” people, these were average men and women who were easily found on Facebook, LinkedIn, Twitter and Instagram. Men and women who had given this way of eating a shot and not only got rid of inflammation, but they also reversed heart disease, diabetes, lost weight without dieting, had more energy and found a new lease on life.

Anxious to minimize my pain, I committed 100% for the seven-day period. Within two days, the inflammation all but disappeared. Additionally, I felt a lot better, dropped four pounds and slept great for the first time in ages.

Not completely convinced this wasn’t a fluke and the inflammation might not return, I gave it another seven days. Then another. It only took a few weeks to decide this was my eating choice from that point forward. I have been 100% plant-based since then.

Since the day the inflammation disappeared, it has not returned. As if that weren’t enough, in the time I’ve been eating plant based, the results have been nothing short of amazing. Not only have I dropped unwanted weight without dieting, my energy and concentration have improved substantially.

Regarding my running, my endurance has substantially increased, my joints don’t ache during, or after, a run and recovery time is incredibly fast.

I’ve also noticed my stress is almost nonexistent as well as my creativity and intuition improving. I no longer feel the afternoon energy dip I had grown to expect as well as my moods are often near euphoric.

I Feel Very Aligned

Another important aspect of a plant-based lifestyle is being much more in alignment with my claim that I care about animal welfare. Truth be told, I have to wonder how I could have consumed animal products for most of my life.

The more research I do on what it takes to get meat on a consumer’s plate, the more committed I am to never again eat any type of meat or dairy product. As I have gone further and further into being vegan, I realize I will never, ever again eat meat and I want to do all I can to be a voice for the voiceless.

I received my certificate of completion from eCornell University for Plant Based Nutrition in March, 2020. I am a founding member of the Plant Powered Women's Network: A global ethical leadership community for vegan and plant-powered women.

My candles made me vegan!

I started my candle business a few years ago after becoming frustrated that I couldn't find eco-friendly, pure and non-toxic candles on the market for use in my Complementary Therapy business. I then decided to make my own. I wanted them as close to nature as possible without harming anything deliberately in the process. It then got me thinking...I loved the finished product so much and was so proud that they were vegan (I was a vegetarian at the time) that if I was promoting them as vegan, surely I should be too!

I had pretty bad angina in 2018. I watched Forks Over Knives and went totally vegan/plant based the following Sunday. I lost almost 60 pounds within 4 months and the angina disappeared within the first 30 days. I started slipping in vegan processed foods and quit losing weight instantly. Anyways, I have struggled to get full out plant based ever since, but hopefully it won’t be long now before I’m shedding the weight and getting healthy.

After watching What the Health and Forks Over Knives, it was all just too much to ignore! Lost 40 pounds in 6 months without making myself crazy with calories and intensive gym workouts. It was a shockingly easy transition that I would never have imagined without first trying.

I am a perfect example of fighting for some animals(animal activist) all my life and not knowing about my food until I was 47 and awakened. I became an animal activist after seeing a canned hunting event on tv when I was 20 and lost my mind at what I saw. This is before the internet so I found a group called CHARC and learned about many abuse's , but not the farming or our food(they are still going strong here in Chicago). It has been such a long journey and I have been an everyday activist since learning the truth, along with my 3 vegan daughters and wife. Happy to share my story that has struggles. I help open eyes everyday when I see an opening. Turned both my now 78 year old parents vegan as well. I used to help rescue Tibetans , but now only animals. I go to Slaughter houses (they are customers) and witness what they don't want us to see. I will not stop speaking up and fighting for the voiceless until my last breath. The guilt of not knowing sooner I feel doesn't leave. We must never give up!!! I have too much to discuss that would be a novel.

I found Dr. Danielle Belardo's podcast through some co-workers, and learned so much right out of the gate. I wanted to get off my statin medication and also to help the inflammation in my knees so I could actively exercise again. I'm happy to say that my cholesterol is coming down, so I'm planning to go off the statin soon, and I'm exercising 5-6 days per week. I'll never go back to the standard American diet!

The real driver was to minimise cognitive decline. My mom had suffered with this for 7 years dying at 97. I am now 69 and could have 30 more years to live so see myself as still young. I want all my remaining years to be healthy.

I was suffering from bloated stomach so decided to cut everything out of my diet then re-introduce things like Chicken/Red Meat/Milk/Cheese etc bit by bit to lockdown what the issue was.
After a week i felt great and been Vegan ever since.
Im an Ultra Runner and found since turning vegan my recovery is very much next day. Rarely suffer from DOMs after the gym and generally feel fantastic

I've been on and off the vegan/vegetarian bandwagon for 30 years. It always felt somewhat weird but that was due to my being ignorant. I've been strict vegan since being convinced by the irrefutable evidence based research that clearly supports a whole foods plant based lifestyle as optimal diet for humans as presented by physicians like Dr. T.C. Campbell, Dr. N. Barnard (and PCRM), Dr. McDougall, Dr. M. Mills, Dr. P. Popper, Dr. B. Montgomery, Dr. Greger, etc......and this is it; there is no way not to be convinced. I'm vegan for good.

My husband Steve was going in for a full Right hip replacement, 11/2018. His Orthopedic Surgeon said he would soon be needing his Left hip done as well because it too was riddled with Arthritis.
My nutrition major prompted me to research what we could do nutritionally, it all kept turning up Whole Food Plant Based. We changed our Lifestyle to WFPB, February 1, 2019. Steve effortlessly dropped 40+lbs., has endless amounts of energy and his arthritis and bursitis have completely gone away. The pluses have been just as good for me too. We are avid bike riders and Pickle Ball enthusiasts. In fact on Steve’s 69th Birthday we had our fastest bike ride to date, 4.37minute per mile for 12 miles. This is a Lifestyle we embrace and would never go back!

Listening to speakers like Joel Furhman, Brenda Davis, and Gabriel Cousens made me realize that I could no longer support the exploitation and suffering of animals.

Shortly after starting we watched the documentary Dominion and haven’t looked back since. Now we remain vegan not just because of the benefits to our body... but the earth, ecosystem, animals and every reason in between!

I had 2 strokes as well as brain surgery. After my second stroke, I stopped eating meat, then fish, eggs, and dairy products. it was for the sake of taste. I just stopped liking these foods. So I ate for 1 year. But I didn’t call myself a vegan, because vegan is not about food, it’s about a conscious choice for me, philosophy. Then I began to eat some of the listed products. And now I'm a pescatarian. But since then, after the second stroke, I have not eaten meat. But the philosophy of veganism appeals to me very much🌱
